Prep and preheat
- Preheat the oven to 350°F. Grease and line a 9×5-inch loaf pan with parchment paper.
Cream the base
- Beat the softened butter and granulated sugar together for 2–3 minutes until light and fluffy. Scrape the sides once during mixing to keep the batter even.
Add wet ingredients
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract until fully incorporated.
Fold in bananas and sour cream
- Stir in the mashed bananas and sour cream until smooth and creamy. Stop mixing as soon as no streaks remain.
Combine dry ingredients
- Whisk together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon if using. Whisk until the cinnamon is evenly dispersed.
Assemble batter
- Fold the dry ingredients into the banana mixture until just combined. Do not overmix so the loaf stays tender and moist.
Bake
- Pour the batter into the prepared loaf pan. Sprinkle the top with coarse sugar if desired.
Finish baking and cool
- Bake for 60–70 minutes, or until the loaf is golden brown and a toothpick inserted into the center comes out clean. If the top browns early, tent loosely with foil for the remaining bake time.
Cool before slicing
- Cool the bread in the pan for 15 minutes, then transfer it to a wire rack to cool completely before slicing. Letting it cool fully helps the crumb set so slices hold together.
