Ingredients
  

Chicken
  • 1.5 lb boneless, skinless chicken breasts Cut into bite-sized pieces.
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
Vegetables
  • 2 cup broccoli florets Steam until crisp-tender.
  • 1 cup shredded carrots Keep fresh for added texture.
  • 1 red bell pepper Sliced; keep fresh for added texture.
  • 2 tbsp sliced green onions For garnish.
  • 1 tsp sesame seeds For garnish.
Rice and Assembly
  • 4 cup cooked jasmine rice
Honey Garlic Sauce
  • 0.33 cup honey
  • 0.25 cup low-sodium soy sauce
  • 4 garlic Minced (about 4 cloves).
  • 1 tbsp rice vinegar
  • 1 tsp grated fresh ginger
  • 1 tbsp cornstarch
  • 2 tbsp water

Method
 

Season and cook the chicken
  1. Season the chicken with salt, black pepper, and garlic powder.
  2. Heat the olive oil in a large skillet over medium-high heat, then cook the chicken for 6–8 minutes, stirring occasionally, until golden and cooked through to 165°F. Transfer the chicken to a plate.
Make the honey garlic sauce
  1. In a small bowl, whisk together honey, low-sodium soy sauce, garlic, rice vinegar, and grated fresh ginger.
  2. Pour the sauce into the skillet and bring it to a gentle simmer, stirring as needed.
  3. Whisk the cornstarch and water together, then whisk into the simmering sauce.
  4. Cook for 1–2 minutes until thickened and glossy.
  5. Return the chicken to the skillet and toss until evenly coated in the honey garlic sauce.
Prep the vegetables and rice
  1. Steam the broccoli for 4–5 minutes until crisp-tender.
  2. Keep the shredded carrots and sliced red bell pepper fresh for added texture.
  3. Divide the cooked jasmine rice evenly among four meal prep containers.
Assemble and chill
  1. Top each container with honey garlic chicken, broccoli, carrots, and bell pepper.
  2. Garnish with sliced green onions and sesame seeds.
  3. Allow the bowls to cool completely before sealing and refrigerating for up to 4 days, until set to reheat-friendly portions.

Notes

For the best sauce cling and texture, toss the chicken in the thickened honey garlic sauce for just long enough to coat, then assemble promptly. Refrigerate in sealed containers for up to 4 days; freeze is not recommended due to the sauce texture. For a lower-sodium option, use reduced-sodium or low-sodium soy sauce and keep the cornstarch slurry the same for the glossy finish.
