Crispy Bacon Brussels Sprouts

Crispy bacon Brussels sprouts roast on a sheet pan until the cut sides are deeply browned and the centers are tender. A final roast crisps the bacon and brings the savory, rendered-bacon flavor together with the sprouts.

Ingredients

  • 6 oz bacon thick-cut, cut into 1/2-inch pieces
  • 1.5 lb Brussels sprouts trimmed and halved
  • 1 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • 1 18x13-inch rimmed baking sheet

Method

  1. Heat the oven to 425°F.
  2. Spread the bacon pieces on an 18x13-inch rimmed baking sheet.
  3. Roast for 8–10 minutes, until some fat has rendered and the pieces are just beginning to brown.
  4. Transfer the bacon to a paper towel-lined plate, leaving the rendered fat on the baking sheet.
  5. Add the Brussels sprouts, olive oil, salt, and pepper to the baking sheet and toss to coat.
  6. Arrange the sprouts cut side down in a single layer.
  7. Roast for 20–25 minutes, until the cut sides are deeply browned and the sprouts are tender when pierced with a fork.
  8. Return the bacon to the baking sheet and toss with the sprouts.
  9. Roast for 3–5 minutes, until the bacon is crisp.

Notes

For the deepest browning, dry the Brussels sprouts well before roasting and keep them cut side down in a single layer. Refrigerate leftovers in an airtight container for up to 4 days; freezing is not recommended because the sprouts soften. For a vegetarian variation, omit the bacon and use additional olive oil.
