Ingredients

  • 8 cup water
  • 1.5 lb green beans fresh, trimmed
  • 12 bacon regular-cut slices, cut in half crosswise
  • 0.25 cup unsalted butter
  • 2 tbsp light brown sugar packed
  • 0.5 tsp garlic powder
  • 0.25 tsp black pepper

Equipment

  • 1 18x13-inch rimmed baking sheet

Method

  1. Heat the oven to 400°F.
  2. Line an 18x13-inch rimmed baking sheet with parchment paper.
  3. Bring the water to a boil in a large pot, add the green beans, and cook for 3 minutes.
  4. Drain the green beans thoroughly.
  5. Spread the beans on a clean kitchen towel and pat dry.
  6. Let the beans cool for 5 to 10 minutes.
  7. Divide the beans into 24 bundles of 6 to 7 beans each.
  8. Wrap each bundle with half a slice of bacon and arrange seam side down on the baking sheet.
  9. Melt the butter in a small bowl.
  10. Stir in the brown sugar, garlic powder, and black pepper.
  11. Brush the butter mixture over the bundles.
  12. Bake for 35 to 40 minutes, turning the bundles after 20 minutes, until the bacon is browned and crisp and the beans are tender.

Notes

Pat the beans thoroughly dry so the bacon can brown and crisp. Refrigerate leftovers for 3 to 4 days; freezing is not recommended. For a dairy-free variation, use plant-based butter.
