Ingredients

  • 4 bacon slices, chopped
  • 1 yellow onion small, finely chopped
  • 1.5 lb fresh green beans trimmed
  • 2 cup chicken broth
  • 0.5 tsp black pepper
  • 0.25 tsp kosher salt

Equipment

  • 1 5-quart Dutch oven

Method

  1. Cook the chopped bacon in a 5-quart Dutch oven over medium heat until crisp, 7 to 9 minutes.
  2. Transfer the bacon to a paper towel-lined plate, leaving the drippings in the pot.
  3. Add the finely chopped onion to the drippings and cook, stirring occasionally, until softened, 4 to 5 minutes.
  4. Add the trimmed fresh green beans, chicken broth, black pepper, and kosher salt.
  5. Bring the broth to a boil.
  6. Cover the Dutch oven and reduce the heat to low.
  7. Simmer until the beans are very tender, 45 to 60 minutes.
  8. Crumble the bacon over the beans.
  9. Stir gently before serving.

Notes

For the best texture, simmer the beans until very tender. Refrigerate leftovers for up to 4 days or freeze them; use low-sodium chicken broth for a lower-sodium option.
