Slow cook the chicken
- Place the chicken breasts in the slow cooker and spread them into an even layer.
- Sprinkle the ranch seasoning, garlic powder, onion powder, and black pepper evenly over the chicken.
- Add the cream cheese on top of the chicken and pour in the chicken broth.
- Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the chicken reaches an internal temperature of 165°F (74°C) and shreds easily; visual cue: the cream cheese should be melted and the sauce bubbling at the edges.
Shred and build the creamy sauce
- Remove the chicken, shred it with two forks, and return the shredded chicken to the slow cooker.
- Stir until the cream cheese is fully incorporated into a smooth, creamy sauce; visual cue: no cream cheese lumps remain.
- Mix in 1 cup of the shredded cheddar cheese and half of the crumbled bacon until melted and creamy; visual cue: the sauce turns thick and glossy.
- Sprinkle the remaining cheddar cheese over the top, cover, and let sit for 5 minutes until melted; visual cue: the cheese layer looks melted and slightly bubbly.
Finish and serve
- Top with the remaining crispy bacon, sliced green onions, and chopped parsley.
- Serve hot on toasted sandwich buns, baked potatoes, slider rolls, rice, pasta, or with crackers as a creamy party dip; visual cue: sauce clings to the chicken and the bacon stays crunchy where possible.
Notes
For best shredding, keep the slow cooker covered during cooking and only uncover once the chicken is fully tender. Store in an airtight container in the fridge up to 3-4 days; freeze in portions up to 2 months (thaw in the fridge and reheat gently). For a lighter option, use reduced-fat cream cheese and light shredded cheddar if desired.
