Ingredients

  • 1.5 lb carrots peeled and cut into 1/2-inch-thick rounds
  • 8 cups water
  • 2 tbsp unsalted butter
  • 2 tbsp honey
  • 0.5 tsp kosher salt
  • 0.125 tsp black pepper

Method

  1. Bring the water to a boil in a 3-quart saucepan.
  2. Add the carrots and cook for 8 to 10 minutes, until fork-tender.
  3. Drain the carrots.
  4. Return the saucepan to medium-low heat, add the butter and honey, and stir until the butter melts.
  5. Stir in the salt and pepper.
  6. Add the drained carrots and toss for 1 to 2 minutes, until evenly coated and glossy.

Notes

For evenly glazed carrots, cut the rounds uniformly. Refrigerate in an airtight container for up to 4 days; freezing is not recommended because the carrots can soften. For a dairy-free version, use a plant-based butter.
