Cook the potatoes and sausage
- Heat the olive oil in a large skillet over medium heat. Cook the frozen diced hash browns for 8–10 minutes until golden and crispy, then transfer to a plate.
- Add the breakfast sausage to the skillet and cook for 6–8 minutes over medium heat until browned and no pink remains. Drain excess grease if needed.
Scramble the eggs
- Whisk together the eggs, milk, salt, black pepper, and garlic powder in a bowl. Pour into a clean nonstick skillet over medium-low heat and gently scramble for 4–5 minutes until just set and fluffy, not dry.
Assemble and warm tortillas
- Combine the scrambled eggs with the cooked sausage, hash browns, shredded cheddar cheese, and chopped green onions until evenly distributed.
- Warm the flour tortillas for 15–20 seconds to make them flexible. Divide the filling evenly among the tortillas, fold in the sides, and roll tightly into burritos.
Freeze and reheat
- Serve immediately with salsa if desired, or allow the burritos to cool completely. Wrap each burrito tightly in plastic wrap and aluminum foil, then freeze for up to 3 months.
- To reheat, unwrap and microwave from thawed for 1–2 minutes or from frozen for 2½–3½ minutes, turning halfway through, until heated through.
Notes
Pro tip: keep the eggs on the wetter side (just set) so the burritos stay tender after freezing. Refrigerate leftover thawed burritos for up to 2 days. Freeze wrapped burritos up to 3 months; reheat from thawed or frozen as directed. For a lower-fat option, use turkey breakfast sausage and reduced-fat cheddar without changing the cook times.
