  • 2 tbsp olive oil
  • 4 yellow onions Use thinly sliced for best caramelization.
  • 4 cloves garlic
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 bay leaf
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 6 cup low-sodium beef broth
  • 0.5 cup dry white wine
  • 1 tbsp balsamic vinegar
Baguette & cheese topping
  • 1 French baguette Sliced for toasting and topping bowls.
  • 2 cup shredded Gruyère cheese Use Gruyère for the classic melty finish.
  • 2 tbsp fresh parsley Chopped, for garnish.

Method
 

Caramelize the onions in the crockpot
  1. Add the unsalted butter, olive oil, sliced yellow onions, minced garlic, Worcestershire sauce, dried thyme, bay leaf, salt, and black pepper to the crockpot, then stir until the onions are evenly coated (visual cue: onions look glossy and well-seasoned).

Notes

For the best onion texture, slice onions thinly and avoid frequent stirring—occasional stirring is enough for even softening. Refrigerate leftovers in an airtight container for up to 3 days and reheat gently on the stovetop or microwave. Freezing is not recommended because the onions can soften further after thawing. For a lower-sodium option, use low-sodium broth as directed and omit any added salt beyond the listed amount.
