Ingredients

cranberry topping
  • 1 cup cranberries fresh
  • 0.25 cup granulated sugar
  • 2 tbsp water
  • 0.5 tsp orange zest finely grated
brie
  • 1 Brie cheese 8-ounce round, rind left on

Equipment

  • 1 6-inch oven-safe baking dish

Method

Make the cranberry topping
  1. Combine the cranberries, sugar, water, and orange zest in a small saucepan over medium heat.
  2. Bring to a simmer, then cook over medium-low heat for 8 to 10 minutes, stirring occasionally, until most of the cranberries have burst and the sauce has thickened.
  3. Set the cranberry topping aside to cool.
Bake the brie
  1. Preheat the oven to 350°F.
  2. Place the Brie in a 6-inch oven-safe baking dish.
  3. Bake for 12 to 15 minutes, until the center feels soft when gently pressed but the wheel still holds its shape.
  4. Let the Brie rest for 5 minutes.
  5. Spoon the cranberry topping over the Brie.
  6. Serve warm.

Notes

For neat portions, let the cranberry topping cool before spooning it over the Brie. Refrigerate leftovers in a covered container for up to 3 days; freezing is not recommended. For a dairy-free option, use a dairy-free Brie-style cheese.
